[Mcgguroom] Mac Signature Doenjang

Artisan-Made, Extra-Rich & Pungent

[Mcgguroom] Mac Signature Doenjang

  • 2 ingredients only
  • 100% Korean soybeans
  • 12+ months in onggi
  • 5-star Gyeongbuk rating

Today, we introduce Mac Signature Doenjang (맥된장), an artisan doenjang known for its exceptionally rich, pungent flavor.

It has a noticeably deeper 구수한맛 (goo-soo-han-mat) than most traditional varieties. Koreans use the word for the warm, nutty, deeply umami taste of a well-fermented soybean paste. Many doenjangs have it, but Mac is known for its pronounced 구수함, which gives it a fuller, more satisfying flavor.

That depth comes from time. Mac Doenjang is naturally aged for at least 12 months in traditional onggi jars, so the paste develops a deeper, more layered savory character.

It’s made by Mcgguroom in Cheongsong, near Juwangsan, under the guidance of Seong Myeong-rye, Korea’s Certified Traditional Food Master No. 45. Gyeongsangbuk-do Province gave it a 5-star rating in its regional doenjang evaluation.

Daniel’s Take

Traditional artisan doenjang has a much deeper, stronger flavor than the mass-produced varieties you’ll find at grocery stores. For a pot of doenjang jjigae (3–4 servings), I recommend 1 tablespoon. If you want it stronger, add ½ tablespoon at a time. A little minced garlic and/or a small dab of gochujang rounds it out.

So what’s inside?

Full Ingredients List Meju 96% (made from 100% soybeans), sun-dried sea salt 4%. Both from Korea.

In the box One 500 g glass jar. Made by Mcgguroom (영농조합법인 한국맥꾸룸) in Cheongsong, South Korea.

To keep Refrigerate after opening. Best within 18 months of the production date; the best-before date is printed on the label.

Good to know Contains soy. Doenjang is naturally fermented, so it keeps releasing a little gas inside the jar. We vacuum-seal every jar before it ships to prevent leaks, but changes in air pressure during the flight can still push out a little gas or paste. It’s still safe to eat, and a small leak isn’t grounds for a refund or exchange.

Excellent Doenjang

Having been introduced to Korean cuisine in a relatively short period of time,I can’t claim to be super knowledgeable about Korean food, but I’m slowly learning, and one of the things I’ve learned is that Mac Signature Doenjang adds a tsunami of umami to one’s cooking!

Uniquely richly-scented doenjang

A product like this is where I realize how different doenjang can be from the average commerically prepared products, and also the variation that fermentation can produce. Smells amazing, tastes great, a great purchase overall.

Extra-rich, deeply savory doenjang

Mac Signature Doenjang (맥된장) is an artisan doenjang known for its rich, pungent flavor and a noticeably deeper gusuhan-mat (구수한맛) than most traditional pastes.

It’s made with just two ingredients, Korean soybeans and sun-dried sea salt, and naturally aged for at least 12 months in traditional onggi jars. Gyeongsangbuk-do Province gave it a 5-star rating in its regional doenjang evaluation.

Rows of onggi jars at Mcgguroom and the Mac jang range on a wooden floor

Made at the foot of Juwangsan

Mcgguroom makes its jang in the clean air and water around Juwangsan, in Cheongsong, North Gyeongsang Province, with carefully chosen local ingredients and fermentation methods passed down through generations.

Ladling jang from an onggi jar, a bowl of Korean soybeans and cloth-covered onggi jars

Aged in onggi for 12 months or more

The jang ages in thousands of traditional earthenware onggi jars for more than 12 months. The jars let it breathe and mature slowly, building the deep, layered flavor of real Korean jang.

That patience is what gives it rich depth, balanced umami and the unmistakable character of true Korean fermentation.
