[Kosrak] Organic Korean Gochujang

100% Organic Ingredients

[Kosrak] Organic Korean Gochujang

  • Fermented 1 full year
  • Certified organic
  • Korean chili & rice
  • Aged in onggi jars

Today, we offer Kosrak’s Organic Gochujang (고스락 유기농 고추장), fermented for one full year.

Truly organic gochujang is surprisingly hard to find, even in Korea. Every ingredient in this one is certified organic, from the Korean-grown red chili powder to the glutinous rice, white rice, barley malt and meju (fermented soybean) powder.

Each batch ferments for a full year in traditional onggi (jangdok) earthenware jars. The breathable clay lets the paste mature slowly, giving a deep umami, balanced sweetness, gentle heat and a smooth, rounded finish. One spoonful is enough for bibimbap, a Korean BBQ marinade, or a pot of jjigae.

Founded in 2009, Kosrak is devoted to keeping Korean fermentation traditions alive with organic Korean ingredients. It tends more than 5,000 traditional onggi jars (jangdok), and runs its own Korean restaurant, cooking every day with the same sauces and pastes it sells. That keeps its recipes honest.

Available as one 500 g jar, or a 1 kg option (two 500 g jars) at 10% off.

So what’s inside?

Full Ingredients List Organic red chili powder 28%, organic glutinous rice 16%, organic white rice 16%, organic barley malt 12%, organic rice syrup 11%, sun-dried sea salt 10%, organic meju (fermented soybean) powder 7%. All from Korea.

In the box One 500 g glass jar with a metal lid (two jars with the 1 kg option). Made by Dasongri Saramdeul (다송리사람들), Kosrak’s maker, in Iksan, South Korea.

To keep Refrigerate once it arrives, and always after opening, with the lid tightly closed. Best before the date printed on the jar label.

Good to know Contains soy. Made with barley malt, so it isn’t gluten-free (it contains no wheat). Gochujang is naturally fermented, so it keeps releasing a little gas inside the jar. We vacuum-seal every jar before it ships to prevent leaks, but changes in air pressure during the flight can still push out a little gas or paste. It’s still safe to eat, and a small leak isn’t grounds for a refund or exchange.

[Kosrak] Organic Korean Gochujang [고스락] 유기농 고추장

A 500 g jar of Kosrak organic gochujang beside a mortar of chili powder and a dish of paste

Certified organic gochujang, fermented for a full year

Truly organic gochujang is surprisingly hard to find, even in Korea. Kosrak, a traditional jang maker devoted to certified organic fermented foods, makes one where every key ingredient is organic and Korean-grown.

Each batch is fermented for one full year in traditional Korean jangdok jars. That patient aging gives a rich umami depth, balanced sweetness, gentle heat and a smooth, rounded finish.

No preservatives, no additives, no artificial coloring. Available in a 500 g jar and a 1 kg option.

Organic, from the chili to the meju

Made with organic Korea-grown red chili powder, organic glutinous rice and white rice, organic barley malt, organic rice syrup, sun-dried sea salt and traditional meju (fermented soybean) powder.

From the chili peppers to the meju, every ingredient is chosen for a cleaner, more authentic gochujang.

Fermented one year in breathing jangdok jars

This gochujang ferments for one full year in jangdok, traditional Korean earthenware jars.

The clay breathes, letting air and moisture pass gently in and out. That gives beneficial microorganisms ideal conditions to slowly ferment and mature the paste, building a deeper umami, balanced heat and a smooth, rounded finish that quick industrial fermentation can’t match.

Bibimbap in a brass bowl topped with a fried egg and a spoonful of Kosrak gochujang

A spoonful makes all the difference

Just one spoonful adds rich umami, gentle heat and authentic Korean flavor. Use it in bibimbap, of course, and for marinating Korean BBQ, stirring into soups and stews, or adding depth to your favorite recipes.

Korean organic certification mark (유기농)

Certified organic

Made with certified organic Korean ingredients. No preservatives, additives or artificial coloring.
