[Mcgguroom] Mac Golden Doenjang (16 month aged), 500g

16-Month Traditional Korean Soybean Paste

[Mcgguroom] Mac Golden Doenjang (16 month aged)

  • 16+ months aged
  • Double-fermented
  • 2 ingredients only
  • No MSG or preservatives

Mac Golden Doenjang (황금빛 맥된장) is a premium Korean soybean paste aged for over 16 months in traditional onggi (earthenware) jars. That’s four months longer than Mac Signature Doenjang, which ferments for 12 months.

It follows a rare double-fermentation method called geopdoenjang (겹된장), which gives it a deeper, richer flavor than standard doenjang.

After the first 12 months of fermentation, the soy sauce is drawn off and more meju (fermented soybean blocks) is added. The paste then keeps aging for four more months, so the flavor deepens and matures.

This longer process concentrates the flavor into a golden doenjang with intense umami and real depth.

It’s made by Korea Mcgguroom in Cheongsong, under Traditional Food Master Seong Myeong-rye, with just two ingredients: Korean soybeans and Korean sea salt. Traditional Korean fermentation at its purest.

Debating between Mac Signature and Mac Golden? Try the golden one. It’s the version most customers rave about.

So what’s inside?

Full Ingredients List Meju 96% (made from 100% soybeans), sun-dried sea salt 4%. Both from Korea.

In the box One 500 g glass jar. Made by Korea Mcgguroom (영농조합법인 한국맥꾸룸) in Cheongsong, South Korea.

To keep Refrigerate after opening. Best within 18 months of the production date; see the date printed on the label.

Good to know Contains soy. Doenjang is naturally fermented, so it keeps releasing a little gas inside the jar. We vacuum-seal every jar before it ships to prevent leaks, but changes in air pressure during the flight can still push out a little gas or paste. It’s still safe to eat, and a small leak isn’t grounds for a refund or exchange.

[Mcgguroom] Mac Golden Doenjang (16 month aged)

Mac Golden Doenjang (황금빛 맥된장) in a 500 g jar

Golden doenjang, aged over 16 months

Mac Golden Doenjang is Korea Mcgguroom’s double-fermented soybean paste. It’s made the traditional geopdoenjang (겹된장) way and aged for over 16 months in earthenware onggi jars.

It’s the flagship of Mcgguroom’s Golden Line: a golden-hued doenjang with deep, complex umami, made with just Korean soybeans and Korean sea salt. No additives, MSG or preservatives.

Available in a 500 g jar.

Seong Myeong-rye, Korea’s Traditional Food Master No. 45, with her onggi jars

Crafted by Food Master Seong Myeong-rye

This doenjang is made under the guidance of Seong Myeong-rye, Korea’s Certified Traditional Food Master No. 45. The title comes from the Ministry of Agriculture, Food and Rural Affairs and recognizes her expertise in traditional soy fermentation.

Her jang is made at the foot of Juwangsan in North Gyeongsang Province, with clean water and air, carefully chosen local ingredients and fermentation methods passed down through generations.

Ladling soy sauce from an onggi jar, Korean soybeans, and cloth-covered onggi jars

Aged in thousands of onggi jars

The jang ages naturally in thousands of traditional earthenware jars (onggi) for more than 12 months. The jars let it breathe and mature slowly, building the deep, layered flavor of real Korean jang.

Patience and craft do the work: rich depth, balanced umami and the unmistakable character of true Korean fermentation.

Double-fermented: the geopdoenjang method

Golden Mac Doenjang goes one step further. After the first 12 months of fermentation, the soy sauce is drawn off and more meju (fermented soybean blocks) is added to start a second fermentation.

The paste then keeps aging in old jangdok jars for over 16 months in all. The longer, two-stage ferment concentrates the flavor into a golden doenjang with intense umami and real depth.

What makes Mac different?

A short film from Korea Mcgguroom: Food Master Seong Myeong-rye explains how her jang is made and aged among the onggi jars (in Korean).

Just soybeans and sea salt

Mac Golden Doenjang has only two ingredients: Korean soybeans, made into meju, and Korean sun-dried sea salt. No additives, MSG or preservatives.

It’s certified as an official Korean Traditional Food (전통식품), made with time-honored jang-making methods.

Ask a Question
What’s the difference between Mac Golden Doenjang and Mac Signature Doenjang?

Mac Signature Doenjang is aged for more than 12 months in onggi jars. Mac Golden Doenjang is aged the same way first; then the soy sauce is drawn off, more meju is added, and the paste keeps aging for over 16 months in total. The longer ferment and the two-stage method give it a deeper flavor, and many customers prefer the Golden for its richer taste.

How do I store this?

Keep it in the refrigerator after opening.

What is the full ingredients list?

Meju 96% (made from 100% Korean soybeans) and Korean sun-dried sea salt. Contains soy. No additives, MSG or preservatives.

Who makes this doenjang?

Korea Mcgguroom (영농조합법인 한국맥꾸룸) in Pacheon-myeon, Cheongsong, North Gyeongsang Province, under Traditional Food Master Seong Myeong-rye.

What’s the shelf life?

18 months from the production date. Please check the date printed on the label.

After a few months, the paste has turned darker in color. Is this normal?

Yes, it’s completely normal. Doenjang keeps fermenting slowly, so it turns a little darker over time. It’s safe to eat.

After a few months, there is some liquid in the jar. Is this normal?

Yes, it’s completely normal. Just give it a mix. It’s safe to eat.

My jar arrived with a slight leak. Is this OK?

It can happen.
