Meet 100% Cold-Pressed Raw Perilla Oil from Saebyeok Mill, a small mill in Yangpyeong, the green farming county just east of Seoul.
Most perilla oil in Korea is made the old way: the seeds are roasted hot, then pressed. That gives you the deep, toasty oil you might know from Korean restaurants. It's delicious, but the heat changes the oil, kills the Omega-3 content and drowns out the seed itself.
Saebyeok Mill goes the other way. Whole native perilla seeds, grown only in Yangpyeong and never blended with seeds from other regions, are rinsed three times in clean water and pressed cold, at just 12°C. No roasting at all (Raw Perilla Oil).
It's a slow, costly way to make oil. A cold press gives less than half the yield of a regular one. What you get in return is a clear, golden oil that tastes clean and fresh, with a soft nuttiness and a light, silky feel. It's the kind of oil you pour straight onto food rather than cook with.
In Korea, plenty of people keep a bottle in the fridge and take a spoonful each morning. Others swear by a drizzle over myeongran (salted pollock roe) and hot rice.
So what's inside?

To use Drizzle over namul, bibimbap, cold noodles, tofu or seaweed soup at the end. Try it as a dip for sashimi, or a few drops over vanilla ice cream. Being raw, it's best unheated.

To keep Store at room temperature away from direct sunlight. Once opened, keep it in the refrigerator. Pressed from new-crop seeds, it's best enjoyed within a year of pressing.
Good to know Contains perilla seed. Yangpyeong is a designated eco-friendly farming zone where pesticide use is kept to a minimum, and these seeds were tested with no pesticide residue detected. A lab test also put the oil's acid value (a freshness marker) at 1.1, well under the 4.0 limit, with 64% alpha-linolenic acid (omega-3).

Pressed at 12°C, never roasted
Most Korean perilla oil starts with seeds roasted at high heat. That's where the dark, toasty flavor comes from. Saebyeok Mill skips the roasting entirely and presses whole seeds at just 12°C, keeping heat-driven changes to the oil to a minimum.
It's slow going. A cold press yields less than half of what a regular press does. In return you get a clear, golden oil with a clean, silky texture and the fresh taste of the seed itself.
One county, one crop
Saebyeok Mill is a small mill in Yangpyeong, a farming county east of Seoul, making oil from the area's own produce. They press only native perilla seeds grown there, and never blend in seeds from other regions.
The seeds are rinsed three times in clean water before pressing, and nothing else goes in: the only ingredient is 100% Korean perilla seeds.

Subtle enough for raw fish
Because it isn't roasted, this oil is lighter and less heavy on the nuttiness than the perilla oil you might know. That makes it a lovely dipping sauce for sashimi: a pinch of salt in a little dish of oil, and you're set.
It's also what you want over namul, bibimbap, buckwheat or seaweed noodles, tofu, or a bowl of seaweed soup just before serving.

Yes, even on ice cream
Try a few drops of cold-pressed oil over vanilla ice cream. It turns sweet and nutty, almost like a scattering of peanuts, and the ice cream feels even smoother on the tongue.
