The soybeans are first steamed in traditional iron cauldrons, then naturally aged and fermented in large Korean earthenware jars (jangdok).
Each jar is carefully tended to throughout the seasons to ensure perfect fermentation.
To create that deep, complex flavor, every new batch is carefully blended with previous batches of doenjang that has aged for 2 to 6 years.
