Try a 50/50 mix of artisan doenjang and this Japanese miso.
For a milder taste, adjust to a 25/75 ratio of artisan doenjang to miso.
Again if you find artisan Korean doenjang too strong/earthy, mix in this Japanese miso for an amazing doenjang jjigae!

1. Tofu Skin (Yubu) & Cabbage Miso Soup
Ingredients: 600ml water, 1 soup stock pack, 250g cabbage, 2 sheets of tofu skin (yubu), 3 tbsp miso
1. In a pot, add 600ml of water and the soup stock pack. Let it simmer to make broth.
2. Add chopped cabbage (2cm wide) and sliced tofu skin (1cm wide) and bring to a boil.
3. Once the ingredients are tender, reduce the heat and dissolve the miso. Enjoy!
2. Squid & Seaweed Miso Salad
Ingredients: 1 squid, 100g rehydrated seaweed, 4 tbsp miso, 4 tbsp sugar, 2 tbsp vinegar
1. Slice the squid and seaweed into bite-sized pieces.
2. Mix with the miso, sugar, and vinegar.
3. Toss everything together and serve. Simple and delicious!
3. Basil Miso Dipping Sauce
Ingredients: 50g miso, 20g honey, basil (as desired)
1. Mix all the ingredients in a bowl. That’s it!
