Kang Dae In is one of Korea’s most respected organic rice farmers.

Since 1977, he has cultivated rice the traditional way—without herbicides, pesticides, or chemical fertilizers. His farming is 100% organic. Instead of chemicals, he enriches the soil with natural compost made from rice husks, fruits, vegetables, garlic, and herbs.

For nearly five decades, his mission has been to build a sustainable model of organic farming. Over time, his rice has earned a reputation as some of the finest in Jeollanam-do Province.

Today, we’re proud to present Kang Dae In’s Organic Glutinous Rice, available in two varieties:


  • Glutinous White Rice (찹쌀) – Soft, chewy, and mildly sweet. When cooked, the grains turn very sticky with a melt-in-the-mouth texture. In Korea, it’s often used for rice cakes (떡), sweet rice with nuts & jujubes (약밥), or blended with other grains to add softness.

  • Glutinous Brown Rice (찰현미) – Only the husk is removed during milling, so the germ and bran remain intact for higher nutrition. It also turns sticky, soft, and chewy when cooked—though less so than the white variety.


How is glutinous rice made?

It isn’t made—it’s simply a natural variety of rice. Glutinous rice has a unique starch structure, rich in amylopectin. When cooked, the starch gelatinizes, giving it its signature sticky, chewy texture.

Despite the name “glutinous,” it contains no gluten.

Glutinous rice is a natural rice variety that becomes sticky because of its unique starch composition. 

When cooked, the high amylopectin starch gelatinizes, making the rice extremely sticky, soft, and chewy.

Amount of milling determines whether it’s sold as glutinous white rice or glutinous brown rice (more nutritious, chewier).

Glutinous Brown Rice (찰현미)

Glutinous Brown Rice is still sticky and chewy, but firmer than white glutinous rice since it retains the bran and germ. It offers higher nutritional value with a more nutty, earthy flavor.

What's inside a grain of rice?

  • Rice Germ (배아): Contains 66% of nutrients - Rich in GABA, vitamins, octacosanol, minerals, inositol, and β-sitosterol. 
  • Bran Layer (호분층): Contains 29% of nutrients - Abundant in dietary fiber and plant-based fats.
  • Endosperm (백유): Contains 5% of nutrients - Provides carbohydrates, proteins, and fats.

Milling Involved

  • Brown Rice (현미): Only the husk removed; retains 100% of germ and bran.
  • Semi-Milled Rice (오분도미): About 1/20 of bran removed; retains 50% of germ and bran.
  • White Rice (백미): Germ and bran completely removed.

Keep the rice away from direct sunlight and store it in a cool, well-ventilated place.

For best freshness, transfer the rice into an airtight container or a PET bottle and refrigerate.

Since rice is sensitive to moisture, airtight storage is highly recommended.

Stickiness & Texture

Glutinous Rice (찹쌀): Extremely sticky, soft, and chewy when cooked. The grains clump tightly together.

Regular Short-Grain Rice (백미): Also sticky compared to long-grain rice, but much less than glutinous rice. It has a fluffy yet slightly sticky texture that separates more easily.

Flavor

Glutinous Rice: Has a mild sweetness and very soft mouthfeel.

Regular Rice: Neutral, lightly nutty taste that pairs well with almost any Korean dish.

Culinary Uses In Korea

Glutinous Rice: Often used in special dishes—떡 (rice cakes), 약밥 (sweet rice with nuts & jujubes), 찰밥 (mixed grain sticky rice), or to add softness when blended with other grains.

Regular Rice: Everyday table rice for most meals—served plain (밥), in bibimbap, kimbap, or with soups/stews.

Q: How is glutinous rice made? 

Glutinous rice (찹쌀) isn’t “made” in the sense of being processed into stickiness — it is actually a special variety of rice that naturally has a unique starch structure.

Q: How much glutinous rice should I add to regular rice?

For everyday rice, add about 10–20% glutinous rice to your regular short-grain rice.

Q: Any cooking tips? 

1. Rinse the glutinous rice thoroughly, just like regular rice.

2. Soak for at least 30 minutes before cooking for best texture.

Note: Adding too much glutinous rice can make the rice too clumpy for everyday meals (great for 찰밥 or rice cakes, though).
