Today, we introduce a gochugaru that checks all the boxes:

This gochugaru is made by Haedam, owned by the married couple Jeong Chang-dong and Lee Hae-Seon. They returned to farming in Yeongyang in 2004 to produce organic chili peppers.
The chili peppers are certified organic (farm number #16100465 by Woori Agricultural Certification Center).
What is organic farming?
Organic farming avoids the use of chemical fertilizers, pesticides, or herbicides. Instead, it relies on organic matter, beneficial microorganisms, and natural oils to cultivate chili peppers.
These chilies are grown at the end of Geummarae Valley in Ilwol-myeon, Yeongyang-gun, Gyeongbuk. The significant temperature difference between day and night thickens the pepper skin, enhances sweetness, and gives it a beautiful red color.
To preserve their natural spicy flavor and deep-red color, the peppers are dried at low temperatures for over 4-5 days, rather than using an industrial dryer. This method maintains the natural color, aroma, and taste of the chili peppers.

Our Chili Farm in Geummarae Valley
Our farm sits at the far end of Geummarae Valley in Ilwol-myeon, Yeongyang-gun, Gyeongbuk — a region blessed with ideal soil and climate for cultivating premium chili peppers.

Signature Deep-Red Chili Peppers
Thanks to the valley’s sharp day–night temperature shifts, our peppers develop thicker skins, enhanced sweetness, and their signature deep-red color.

Each chili pepper is hand-picked with care to ensure only the best quality.

Our Harvesting Process
We harvest only fully ripened chili peppers — never underripe. Because they are picked at peak ripeness, no further ripening is needed.
After harvest, each pepper is thoroughly cleaned: twice by hand and once more with a machine, ensuring the highest level of quality and safety.

Our Drying Process
After careful washing, our peppers are dried at a gentle low temperature of 50 °C — a process that locks in their vibrant red color and bold flavor.

Slow, Low-Temperature Drying
Because we dry our peppers at a low temperature, the process takes about 4–5 days. This gentle method preserves the peppers’ natural flavor and color.
By contrast, when peppers are “steamed,” the dryer temperature is raised above 60 °C — a faster process, but one that can compromise quality.
