[Jirisan Chereum] Untoasted Sesame Oil
Jirisan Chereum has two key selling points:
The first is that they use only 100% Korea-Grown Sesame Seeds. Nearly all other Korean brands import their sesame seeds from abroad to keep prices low. However, Jirisan Chereum is a small local operation (owner shown below) that competes on quality. In fact, they grow their own sesame seeds in Korea, near the base of Jirisan Mountain. The company is in control of their entire oil production - from seed cultivation to oil extraction.
Second, their Sesame Oil is pressed-to-order. Unlike large food conglomerates, Jirisan doesn't mass-produce their oil at one time. Instead, they press just enough seeds to fill each order. The sesame seeds are sightly toasted at a very low temperature and squeezed only once. The extracted oil is then filtered two times for a clean, superior taste.
Simply said, it's Korea's finest sesame oil.

What does Sesame Oil taste Like?
Korean Sesame Oil is made by pressing sesame seeds (left). It's one of the most distinctive, fragrant and flavorful oils in cooking - a very deep, nutty aroma.
So why's it used so often in Korean cooking? Sesame oil does a great job in "rounding-out" the sharp notes of garlic, soy sauce or chili peppers. It brings all the flavors together. Think about it as the underlying bass riff in a song!

The longer you roast sesame seeds, the nuttier the oil tastes and the darker it gets. However, you also increase the contents of Benzo(a)pyrene (BaP) - which is found in roasted or burnt foods. To lower BAP level, most manufacturers reduce the temperature at which they roast. Jirisan Chereum has reduced the BAP level in this sesame oil to 0.0% by toasting at a very low temperature.
